I have an iPhone 5 and every time I plug it up it will jump to a high percentage I would usually let it charge all night when I took it off it would go to 50 then 30 then etc etc until it died I don't know what's wrong with it any ideas ?

battery is dead - get a new one.
Also get a new charger - may be broken and could easily killed the battery in the first place.

The brightness usually drains the battery. Have you tried just keeping it down all the way?
