Generally if you are going to use wheat flour you should not replace more than 25% of the white with wheat until you have tried it first.
the wheat flour is a bit more dense and if you are making bread it will not rise as high.
If after replacing 25% of the white with wheat you like the result then you can increase the amount of wheat the next time.
There are some White wheat flours that act more like a white flour than a typical whole wheat.
but it is to your taste and the recipe you are using.

Yes. I have not had success with completely swapping out the wheat for white. I use about 1/2 and 1/2.
