Why aren't more digital cameras modular as something like a Hasselblad? Why do we have to buy a whole new camera to upgrade the sensor?

Do you think it's just a marketing thing, like ordering a meal at McDonald's is cheaper than buying just the cheeseburger thus more or less forcing the consumer to buy more than they want or need?

I get that there's a control that needs to go along with a sensor but Hasselblad, Mamiya and PhaseOne design for all this, why don't Nikon, Canon etc?

A camera back is basically two things: an image sensor and a little computer. As sensors improve, so does the software that controls them (face recognition, image balance, etc.) Upgrading the sensor alone would leave you with the old control circuitry, so the control circuitry would have to be built to handle any sensor, including sensors that haven't been built yet.
