I have 4 quarts of 5W-30 genuine Toyota engine oil but my but my truck takes 8quarts. I cannot get the genuine Toyota engine oil but 5W-30 fully synthetic engine oil from shell. Can I mixed the two since they are both 5w-30 and synthetic oil?

Go ahead and mix them: they are both quality oils in the same viscosity rating. Your engine won't know the difference.

Toyota probably bought theirs off Shell Oil and packaged it in Toyota bottles.

Sure. Ideally the Shell product also meets the required Toyota specifications for your vehicle but it's not detrimental if it does not. But if it does not, you may want to change the oil sooner before the next service is due.
