I have gray walls, and maple cabinets, white and gray flooring so I went with a Brazilian granite called Uba Tooba, it is black with all kinds of light catching sparkly things in it. I love it

I am not well versed on types of granite, but I have had experience with black granite and other darker colors, which I do not like because they show every single spec of water, smudges as they are hard to keep looking clean and shiny. However. lighter colors are more appealing and forgiving when it comes to cleaning.
Most granite suppliers have samples that you can take home to see how it looks with your cabinetry and flooring.

There can't be one choice. It has to go with your cabinets and flooring. So you will have to take a cabinet door off, get a piece of whatever you have on the floor and go to some granite yards and find a piece that works with your things.
