On March 10th I ordered 2 guitars from a seller, later that night I was sent a tracking number. And as of today March 13th it still showing the same thing from then. 'Shipping label created' I've called FedEx and they said they haven't received the item(s). But the seller said that, he has shipped them out. I have a tracking number & delivery date. What do I do?

The seller is lying. If all it says is that a label was created, then that is all that has happened. He/she has no proof that it was actually mailed. You'll have to wait until you can file a claim with ebay, however. Ebay will have you wait at least 7 days, contact the seller at that point, wait another 3 days for contact. If they give you more excuses, you have to wait another week or so before you can file a claim. If they don't respond to your inquiries, after 10 days, then you can file a claim.
But just because they didn't actually ship them out as quickly as you felt they should is not a claim. It MAY be a negative feedback on shipping practices, depending on what their ebay page shows as their turn around time - This may be something that is stated clearly on their ebay page.
