For party snacks ;- Stone them and stuff with either marzipan & dip half in chocolate, or
fill with ricotta / cream cheese.
Maybe you could,
can / jar / preserve them.
Chopped ones can be added to muesli bars, muffins, Sweet date pasty, Ice cream.

Dates make excellent bases for your own gooey homemade cookie bars, or really good fillings for cookies/hand pies. I would suggest doing something like that where you can mash up a whole bunch of them and make them into a filling or cookie bar. Mix with some tart cherries or apples so everything isn't too sweet, or add lemon juice.
