Use medium heat, oil the grill to avoid sticking, put a good coat of olive oil and some salt on it before grilling, and DON'T OVER COOK IT. My BBQ cooks fairy hot and I seldom cook fish over 3 minutes on each side (about 2 min per side if it is 1/2 inch thick)

Put it on a baking pan, season with lemon pepper and Grecian seasoning, cook until it's pink
