Any pan. I've used a cast iron skillet. A glass baking pan, a metal cake pan, a loaf pan. A muffin tin. There really isnt a wrong pan

I use either a large muffin pan or my 10 inch cast iron skillet.
If I use the skillet I drop about 2 or 3 Tablespoons of bacon grease in the pan, put it in the oven to heat up while I make the cornbread. By the time the pan is hot, the grease is hot I pour in the batter, sprinkle the top with a bit more cheese and bake.
The muffin pan I do not pre heat but I will put a bit of bacon grease in the bottom of each.

Most people use a square or rectangle cake pan about 2 or 3 inches deep. The recipe you use should have a recommendation becsuse it depends on how much batter you have

Usually the recipe tells you what sized pan it's for. Most often corn bread recipes will use the same pan as brownies, something around 8" x 12".
