My favorite healthy meal is fish heads and rice. A little onion added to the heads
and salt and pepper before adding the rice.

I add sliced avocados and a sliced hard boiled egg. I have found jars of smoked roasted egg plants and zucchini in a marinade and loved adding them but Aldis was the only store that carried them but they stopped carrying them and I couldn't find them anywhere else. You can use marinated olives that are sold in some stores in the deli department better than any in jars. The Italian and the Greek ones are great. There are also some that are stuffed with cheeses. I like a little crumbled Feta cheese. I don't use all of these ingredients in one salad but maybe 4 or 5 of them with lettuce and tomato and sometimes cucumber. Also use a variety of lettuces and greens. Leaf lettuce is very good for you and some greens like Spring mix. Ice Berg lettuce has no food value whatsoever bu leaf lettuces both green leaf or red leaf are full of vitamins and. You can shave carrots which make them easier to eat in a salad and also little bits of red cabbage are a nice touch. Another thing to look into is to make your own dressings. I can make every dressing that is sold in the stores only without the additives and preservatives so they are tastier and healthier. A simple one is Italian but by brother told me it is also used by the Greeks. Just mostly olive oil virgin is best and Italian or Greek are nice and light with a little red wine vinegar and some fresh crushed garlic and some oregano and basil. It does not need to be refrigerated and will keep well for weeks. Ranch is just mayonnaise with some buttermilk and the amount of each depends on how thick you want it. Then you ad chopped up chives or as a substitute the ends of green onions. I have even made my own mayonnaise but that is a little over the top as it is tricky but it is good. You can also add nuts or dried fruit to a salad.
