1 pound good (pref dark) chocolate, 1 cup heavy cream.


Chop the chocolate very fine, heat the cream to steamy but not boiling and pour it over the chocolate. Stand 3 mins, gently mix until melted smooth. Then you have to let it thicken and cool, either in the fridge or counter, so you can shape them into tiny balls. Then roll those balls in cocoa powder, nuts, sprinkles, cocoa nibs, or melted more chocolate. You can flavor these any way you like, with extracts, spices, jam, rose water, etc.

I make a new batch every two weeks. This week I'm doing honey, orange, ginger, and cardamom (together) flavored ones.
