What are some dinners you’ve made during Quarantine?

I’ve done mostly vegetarian dinners now to cut down on my budget. Bean tacos, bean burgers, bean stew, omelets, pastas, fried rice, huevos rancheros, grilled veg sandwiches, you get the gist. Although yesterday I had to put out a bit for Mother’s Day, chicken cordon bleu

Corned beef and cabbage on night, followed by 8 quarts of corned beef and cabbage soup in the freezer. Whole roasted chicken one night, followed by chicken soup. Prime rib one night-no leftovers for soup on that one. Several casseroles. Roasted pork over beds of fresh veggies. Pulled pork in the crockpot. Mongolian beef ribs in the croc pot. 
And that was just the first month. In the second month? We're eating soup.

We've been eating well. I made a zucchini lasagna one night, and we salvaged the used and leftover sauce and cheese to serve over linguini the next evening. There was still sauce leftover, so my wife made a macaroni casserole with the sauce and topped it with some shredded cheddar. Sunday we had fried shrimp and fries takeout from our favourite local seafood house, and tonight hamburgers with Iceberg lettuce wrappers (no cheese). We also have bean soup and tomato chilli with ground beef in the fridge for whenever.

I've made soups four times, chicken, beef vegetable, split pea and New England clam chowder. Going to make lentil soup tomorrow. I make a large recipe and we have gotten 1-2 dinners plus a couple of lunches out of each batch. I've made steaks (had tenderloin filets tonight), pork chops, roasted and baked chicken, a beef roast or two, a nice stir fry with veggies and shrimp, stuffed shells, various types of pasta with marinara or meat sauce, hashes made with corned beef and kielbasa, burgers, pierogies with onion and Italian sausage...

And in spite of all this good eating, I've managed to lose 20 pounds since early March and keep it off. Also eating plenty of fruit as snacks, haven't had any candy or ice cream in over two months, really limiting the sweets.

I eat like a healthy-minded vegetarian, only minus the added sugars and plus non corn-fed animal products.

AKA extremely healthily.

That didn't change because of the pandemic.

We're eating pretty much normally, although we're using up the leftover Easter ham that we put in the freezer. We've used that for fried rice and quiches, which benefit from the ham flavor but don't require a lot of ham. But we're only feeding two people, so that doesn't take a lot of food. It must be hard for the larger families if the parents are out of work right now.
