squash   in the Southern States?

I work at a Golf Club and the Chef told us of this special Squash that is in the Southern States in the US Like Georgia and the Carolinas but this squash is only available for about 3 weeks and not easy to find.  The chef gave us a sample of the cooked squash like a soup.  Wow is that outstanding!!!!   This is a big squash.   If you think you might know the name of this squash ???  Thanks

Since there are literally thousands of squash types, a photo would have helped. You might even say what color the soup was. Soup is often made from many different types.  I make a butternut squash soup, just made one yesterday with crookneck squash.

First 2 that come to mind are Kobacha Squash and Hubbard Squash neither one are real common in stores but would be found more at Farmers Markets
