Because they break the egg's structure at the manufacturing plant. They use real eggs but are scrambled and processed at the plant and then they freeze the eggs. Who knows if they add any preservatives or other junk. Freeze a real egg and then let it thaw and try cooking it. It's a watery mess and as such the texture of the egg or the mouthfeel is ruined. The eggs are then rethermalized which is a popular method of preparing food at some larger institutions, like prisons where quality isn't your bottom line.

Eggs made for a convenience store has probably been sitting around for quite a while, and is thus made with too much liquid intentionally, knowing that it will dry out over time.

Because you're getting scrambled eggs from a convenient store...? No one said they are good, just easy to get. No one ever asks why 7/11 pizza is so bad...it's 7/11 pizza, for crying out loud.
