That just means they were never actually straight to begin with, and instead were denying it to themselves and/or were in the closet regarding the rest of the world until they reached a point that they just couldn't deny their same-sex attractions or keep them a secret any longer.

Answer:  They don't.

Additional detail:  A straight person may choose to not seek out the company of the opposite sex,  they will not choose to seek out the same sex any more than they would choose to seek out a sheep.     They wont because its simply not in their nature. 

Now if you have a straight person who is in fact a bisexual or even a homosexual but has built his entire life around maintaining the illusion of being straight until one day for what ever the reason he decides he has had enough,  maybe for you this person may appear to be as you describe and maybe even to him self he is,  but he is not.  He was simply someone who denied him self.  A straight person is not denying him self same sex action.  He is simply not into it.
