I spend about 1-3 hours at the gym 6 days a week. Yesterday I went ham and My whole body of very sore, my question is would it be more beneficial to rest or still go. Usually I would workout the muscles that aren’t sore but everything is sore today lol

I do dumbbells exercises for 5 minutes 4 times a week and 20 minutes cross trainer cardio machine nearly everyday without a rest day. I don't have a problem as long as the red bull drink isn't doing any harm.
For an average person, short 30-45 mins exercises per day 6 days a week is better than 1-3 hrs a day and crash your energy and body resources. If you want to do it everyday, make sure you don't spend too long per day.
You need to listen to your body and make wise choices. Consult a trusted friend or relative who provides honest feedback to help you make rational decisions that are in your best interest. That's what I do.
