That will depend, mainly, on how you cook them. If they are boiled in slightly salted water and you have a very small knob of butter on them or a portion of gravy they will be healthy, also, if you cook them in their skins and add very little of those same things to them that will be good. However, if you deep fry them or cook them in other ways that involve a large amount of fat they will be very unhealthy indeed and should be consumed that way just very occasionally. Any sauces that you might wish to pour over your serving of potatoes must also come into the equation. Potatoes are extremely healthy - it is always what you choose to add to them that causes health issues.
