So that the dough is cooked evenly.

Think about it: if you had no hole
then the center of the doughnut would not cook as quickly as the outer edge of the doughnut
and you'd have to cook longer to make sure the center of the doughnut was cooked
possibly OVERcooking the outside of the doughnut.

With the hole
the dough is basically a circle (tube)
that can be cooked evenly and quickly from all sides.
