Gaks's Snacks are made wheat, dairy and nut-free. They are available online and they also have a cookbook.
I happen to love soy crisps! Made primarily from soy and rice, they are low calorie and high-protein - I feel like I could have a bag for dinner! A nationwide brand is Genisoy and they can be mail ordered.
If you are looking for some sort of crunchy veggies beyond carrots and celery, try some jicama or jerusalem artichoke cut into sticks or slices with this faux hummus white bean dip:
1 (15-ounce) can white beans, drained and rinsed - save liquid
2 cloves garlic
1/2 small onion chopped
2 tablespoons lemon juice
1/3 cup olive oil
fresh or dried herbs - I like a couple of tablespoons of chopped rosemary and thyme
Salt
Freshly ground black pepper
Place all ingredients in the bowl of a food processor - process until the consistency you like - anywhere from chunky to smooth. If you need more liquid add a little of the liquid reserved from the can of beans.

koniyaku (japanese food) and sea weed, they are both high in fiber, low in calories, and quite versatile in preparation.
