sure. pull out the compressor & motor and install a firebox (bricks). if there is anything on the back pull it off and cut a hole a few inches below the top. you will get better draught if you stick a small chimney through this hole. pretty simple really. this will be a reletively hot smoker. for a cool smoker use one of those miniture dome type BBQ units for the fire box. rig a smoke pipe from the top of fire box to the bottom floor of freezer. 3" or 4" chimney pipe and a couple adjustable elbows will suffice for this.

Sure can, there are quite a few websites online detailing how to convert a fridge or freezer to a smoker. They're supposed to be among the best smokers, but all the sites recommend hiding them inside a 6 foot solid fenced enclosure, as they may violate local ordinances which look upon appliances in the yard as junk.
Unfortunately, although I've seen the websites, I didn't bookmark them. Search google for: homemade meat smokers and similar wording, that's how I found them. They walk you through the process with detailed instructions and diagrams.
Oh, and once you get it set up, if you like pork, please DO try smoking a few nice racks of plain, completely unseasoned spareribs. No salt or pepper, you can season them to taste at the table, if you can stop eating them long enough to do so. Pure pork goodness - they are to die for!!!
(I'm not putting one in my yard, it's bad enough that the neighbor planted a huge truck tire upright in the front of his garden next to the road, however convenient a landmark it may be. )

I can't speak to brands, but the differences between upright and chest are significant. As cold air falls (while hot rises), a chest freezer is much better at keeping its "cold" and, I believe more energy efficient. An upright freezer will "dump" some of its "cold" everytime you open the door. Simply tell your appliance store that it must fit through a 30" door -- most will, and the top cover is easily removed and replaced. Remember to position your new freezer some inches from the back wall to allow it to breathe. I've seen many ruined by a lack of ventilation by which it gets rid of the heat it is after all removing.
