    it's nice and delicious!

Cold Roast Beef With Two Sauces

1 tablespoon lemon zest, fresh or dried -- finely grated

1 clove salt and pepper to taste

8 slices meat reserved from Sun. Rib Roast

1 cup tomatoes reserved from Sun Tomatoes Sauteed w/ Chipolte

    1 tablespoon olive oil

    1 teaspoon red wine vinegar

    1 teaspoon tomato paste

6 tablespoons dressing reserved from Sunday Eggless Caesar

    2 tablespoons mayonnaise

Combine the lemon zest, garlic, salt and pepper in a small bowl. Slice the reserved meat and arrange on a platter. Scatter the lemon-garlic mixture over the meat. Set aside while you make the sauces. Finely chop the reserved tomatoes, and mix with the oil, vinegar, and tomato paste. Season with salt and pepper. Set aside. In a separate bowl, whisk the reserved Caesar salad dressing with the cheese and mayonnaise. Season with salt and pepper. Serve the roast beef with the sauces on the side.

I'm not sure what you mean by a 'joint' of beef. If it is an economy cut of beef that you want to be tender and juicy, I would cook it the same way I cook venison. Lard it with bacon, (wrap the whole thing with a single layer of bacon, stick toothpicks in it here and there to keep the bacon in place) then put it in a heavy pan in a preheated 400 degree (F) oven for about 15 minutes to sear the meat and keep the juices in. Then reduce the heat to a very low temp, (275 F) and roast slowly for about twice as long as you would at a higher roasting temp. DO NOT PUT WATER IN THE PAN. If you put water in the pan, you are not roasting, you are braising, and it completely changes the way the meat cooks. This is also true for poultry.

Best way to fancy up a meal....wrap it in phyllo dough. You can get it frozen at your grocery store...its super easy to use, and helps keep your meat (beef, chicken, fish) moist. Best of all, it tastes great, and looks even better !! Sides for anything with phyllo are a nice veggie sauteed w/ garlic or lemon (or both), and a simple startch...nothing too fancy to outdue your main dish.

i love my own version of stroganoff. braise beef with beef stock mushrooms garlic and onions, you can do a variety of things with this, ie carmalize the onions, and such. add bay leaf and kosher salt to taste, thinken with a little bit of flower, and add sour cream. serve with rice or egg noodles. enjoy!
