anyone has asam pedas recipe?
i'm goin to visit my fiance family n he expext me to cook his fav food,the asam pedas,n make it worse i really not gud in cooking..
help me guysssssssss

I'm not an expert but i try my best to help you
1 or 2 lemon grass
fresh turmeric about 3cm long
2 or 3 onion and garlic
5 dried chili boil it first
10 Chili padi
4 asam jawa
smash all of those ingredients and then stir fried it for a few minutes and add 2 bowl of water and when the water is boiling add your fish and salt as you like. better if you add asam terung or asam paya.

600 gm ikan pari
300 gm bendir
2 batang serai, dititik
2 kuntum bunga kantan
4 - 6 helai daun kesum
Sedikit minyak untuk menumis
Sedikit air asam jawa
Garam secukupnya
Bahan-bahan digiling halus:
15 tangkai cili kering
5 biji bawang merah
3 ulas bawang putih
2.5 sm halia
Cara:
Ikan disiang dan dicuci bersih. Panaskan minyak. Tumis bahan-bahan digiling halus hingga garing. Kemudian masukkan serai titik. Kacau rata. Masukkan ikan dan air asam jawa. Kacau rata. Apabila mendidih masukkan bendir, daun kesum, bunga kantan dan garam. Kacau rata.

Hi. i wanna share my family recipe. this recipe was created more than 50 years ago. hope u able to cook for ur fiancee's family. but can i write in malay? afraid i give u the wrong info.
Bahan-bahan:
1 ekor ikan merah [potong block]
3 ulas bawang merah [hiris nipis]
1 ulas bawang putih [hiris nipis]
1 ikat daun kesum
asam jawa
300ml air
minyak utk menumis
bahan utk dikisar:
40-50 keping lada kering
6 ulas bawang merah kecil
3 ulas bawang putih
2 inci halia tua
1 inci belacan [prawn paste]
garam
cara-cara memasak:
1. bersihkan ikan dan rendam ikan dgn limau nipis & garam kasar selama 5 minit. [nk buang bau hanyir ikan]
2. panaskan periuk & tumis bawang putih & merah yg dh dihiris tadi.
3. masukkan bhn yg telah dikisar. kacau & tutup periuk. biarkan sambal tu masak selama 30 minit. api biarkan sederhana. kacau sekali skala.
4. apabila sambal dah masak, masuk daun kesum & asam jawa.
5. masukkan air. tunggu menggelegak. lepas tu, masukkan ikan. try rasa semula & jika tawar, bubuh sikit garam.
p/s: selain ikan merah, anda boleh guna ikan tenggiri batang, bawal, kurau, selar ataupun kembung.

Yes, belacan, asam keping or tamarind juice, ground dried chili, salt & sugar. You must add Daun Kesum & Bunga Kantan

follow what <huazefa.. said [but 40-50 dried chillies i think is too much and need to 'tumis' those blended ingredients]
you may mant to add 'bunga kantan', tomatoes, and coriander leaves
also, lemon grass is a must

my resipe ... peramkan di bawah ketiak masam selama setengah jam ... kemudian letakkan cili ... tadaaaa ... Asam Pedas ... hahaha
