Homemade white wine cooler!?
What else could I add to this homemade white wine cooler? I found this online:
2 parts dry white wine (chardonnay)
1 part clear soda (Sprit, 7up...)
Sandra Lee from the Food Network suggests:
1 orange
1 (750 ml) bottle chilled white wine, Riesling (I don't have any)
1 (15-ounce) can sliced peaches in heavy syrup
1/2 cup Cointreau
1/2 cup orange juice
1/4 cup sugar
You have no idea how bad my day was.

If it already smells of vinegar, it is too late to use it as a drinking wine, it is now a wine vinegar. In future batches you can try using a settling agent such as gelatin finings. It is chemically similar to the egg whites, but a whole lot easier to use and is inexpensive. It basically attaches to the suspended solids and settles them to the bottom of your ferment container where you would than siphon it off the crud at the bottom. Now, to avoid the wine going to vinegar, filtering doesn't do much good. Are you racking off your primary into a secondary carboy with an airlock? Sounds to me that you aren't. Air infiltration is usually why wine turns to vinegar. It picks up air born yeast. Carboys and airlocks are cheap and will hopefully save your next batch of wine. Sorry, haven't made wine for a few years so my terminology might not be all that great, but my wine always turned out great! Cleanliness and keeping air out goes a long way!
