How do you make potato pancakes w/ leftover mashed potatoes?

Update:

I made them w/o the egg. They were a little soft, but delicious. I think next time I'll try with the egg, see if it changes the consistency! Thanks for the ideas.

    We add an egg and some parmesan cheese and then saute them in a skillet. If you want, you can also add some herbs to the potato mixture - something like parsley or thyme might be nice. This is the kind of recipe that you can play around with and add all sorts of ingredients to make it taste different depending on what you like and what you have available.

    I love them. I add an egg, salt & Pepper, stir up real well, Take about a 1/2 cup of potatoes and flaten, flour both sides, fry in skillet with butter or oleo added, turn when one side is brown, put on plate when done, add some more butter and eat, Yumm. Your making me hungry.

    Previous answer good. I skip the egg and add garlic and Onion powder to the pancakes. Cook till golden. Yum.

    about 3 cups of mashed potatoes, 1egg and 2 tablespoons flour mix well drop by spoon-fulls in hot skillet that has butter or margarine in it.

    I have no clue, but my mom makes them and they totally ROCK! That's one thing I miss about no longer living at home. Although I did snatch a leftover one at their house one day! LOL

    I add egg and bisquick. Fry in bacon grease.
