Tangy Lemon Icing

3 1/4 c Confectioners' sugar

1 Egg white

1/8 ts Salt

2 tb Melted butter

1/2 ts Grated lemon rind

2 tb Lemon juice

Yellow food coloring

Blend half of sugar, egg white, salt, melted butter & lemon rind in

large bowl. Add 1 Tbls. lemon juice. Blend remaining sugar into

mixture gradually. Stir in enough lemon juice to reach desired

consistency. Tint.

1/2 tablespoons lemon juice

1/2 teaspoon lemon extract

2 cups confectioners' sugar , sifted

blend together well then frost

this is more like a light icing (glaze) than a heavy frosting

for a Frosting try this one :

2 - 8oz packages of cream cheese ( softened)

2 sticks unsalted butter ( softened)

4 cups sifted powder sugar

1 teaspoon lemon extract

cream together the butter and cream cheese till well blended and smooth. then , a little at a time and blending between each addition, add the sifted powdered sugar till all incorporated. next, add the lemon extract and blend till smooth and creamy.. forgo the food colorings .. why add extra chemicals?

INGREDIENTS

2 tablespoons lemon juice

1/2 teaspoon vanilla extract

3 cups confectioners' sugar

DIRECTIONS

Combine the butter, lemon juice, vanilla, and confectioner's sugar and beat until light and fluffy. Add more confectioner's sugar, or lemon juice to adjust the consistency as needed.

follow cin2win but omit vanilla ( too much of a clash ) add some lemon or lime zest and a couple drops green or yellow food coloring , or just freakem out and do a diffrent color they will be surprised expecting something else hee! heee!
