Normark make pretty good filleting knives, using the correct sharpening Stone they should last for years. Im still using a Diawa filleting knife that's about 20 years old but still does the job well, if not better than some of the new ones on the market, i haven't seen any diawa knives on the market recently, maybe they were a limited edition? A range you might want to look at, they all should be of good quality.

I hear Cutco has some really well made fillet knives.
Personally I like the cheapies... Seems like I can get a really nice edge without a whole lot of work.
