what is polenta flour?
I watched Lidia make polenta pudding on PBS, then the poured it into a pan and let it cool overnight, cut it into strips about 2" by 3", fried it it olive oil and made a sandwich with it. is it (polenta) just cooked corn meal? All she used was salted cold water and some kind of flour, sired it over med heat for 30 minutes and let it cool in a 9X11 pan.
Oh sure, after I asked, only then did answers give me other questions about polenta. Oh well,

Yes, it's basically corn meal. You can get it either powdered, that you add liquid to and cook, or in rolls (kind of like sausage) that you cut patties off of and fry 'em up. Either way it's pretty good :)

It's corn meal. However, you can just buy a polenta roll at the grocery store and you can grill it, bake it, or pan fry it. You can season it however you'd like.
