when u Plug in your iPod to itunes, do you see the iPod icon in you itunes under devices. Click it. On the Summery Tabs their should be a tab for applications. (I don't have a touch so i'm not sure. I'm going by assumption on that. But It should be the same as if it were a game right?) If the tab is there, click it. Check the sync apps box. Click the Sync button at the bottom right corner. I hope this works.

When you are looking at your iPods "home page" in iTunes click on the applications tab and there should be a check box or something that will change your settings so your new apps will sync automatically when you book up your iPod. Sorry that's all I can think of :)
Goodness knows I love mine :) in fact i'm answering this question using it!

Click on the Apps tab in iTunes when your iPod is connected> make sure your apps are CHECKED to be synced>click Apply.
It should sync with no problems - I discovered that after downloading Pacman for my 5th gen iPod and finding it wasn't loading it.

Hm, I don't know why it says that it is syncing your photos that you don't have. That's odd. But if you haven't upgraded you iPod, you will have to do that in order to sync any applications to your iPod. The upgrade is $9.95 (plus tax (of course. Haha.)) Well, sorry that I couldn't help with your syncing photos problem, but hopefully I helped you in some way with the applications.

make sure you actually downloaded the apps and they are in the apps section of the library and then click sync

You want to download the latest itunes software, then there will be a section called apps, when you connect your ipod click on the picture of your ipod, then go to apps or games, either one idk which, but then select all or the ones you want. Then press sync or apply.

& this confused me too at first but then after some googling i found this is what you do:
1. click "______'s Ipod" (the name of your ipod)
2. click the last tab on the top right corner titled "applications"
3. check "sync applications"
4. check either "all applications" or "selected applications" depending on whether you dont want all of your apps on your itouch.
5. click "sync" on the bottom right corner and wallah!
