Fun & Easy Peripheral Nervous System Activities?
If you had to conduct an activity for a class of highschool sophmores that had to do with the peripheral nervous system (somatic nervous system, autonomic nervous system, ect.)

Have them test each other's reflexes by hitting each other on the knee.
Another idea that includes the central nervous system
in a dimly lit room, get close to someone and shine a penlight in their left eye. The pupil will get smaller. Then block off the light by putting one of your hands on the person's nose and shine the light in the left eye again. The right pupil will get smaller, even if none of the light reaches it because the right pupil will respond to the light in the OTHER eye. This idea also works if you shine the light in the right eye and look at the left pupil
