How are you assessed at medical school?
How do they (the university) assesses the students to see if they know what they need to? Obviously there is exams, but how many? Do essays need to be written for each class?

It will probably depend on what school you go to. My school has about 25-30 exams each semester (we have about 20 weeks a semester here as well). With the exception of practicals and physical exams, it is basically all multiple choice format because it is the only way to objectively score all of the answers in a reasonable length of time now.
