Any time you have dissimilar metals in contact with each other and an ionic liquid you will get an electrolytic reaction. In the case of stainless steel and copper, the reaction is weak enough and diffuse enough over the stainless that stainless steel flex fittings are confidently recommended by plumbing suppliers to connect water heaters to copper supply lines. If your coolant is antifreeze plus distilled (or deionized) water, electrolysis will be almost nonexistent.
