I wan't quiche for lunch but do I have to have the pastry base?
I have no pastry case ready nor any sheets of pastry in the fridge.
Can I make it without a base, maybe sprinkling flour over teh bottom of the baking dish or has anyone got a very quick base recipe?
I have self raising flour but very low on all purpose flour
Making bacon and cheese quiche (no onion)
I'm low on all purpose flour but have what I think Americans call bakers flour we call it self raising flour.
Thanks all, it turned out great without a crust and i'm looking forward to trying everyones suggestions this summer.

I make crustless quiche all the time. Just butter the baking dish and put all your fillings in. It comes out fine and it's healthier! Just bake it until the center is firm. That usually takes about 40 mins at 350, but it depends on what you have in it and how deep the mixture is. Just keep an eye on it.

Flaky Butter Crust:
* 1 1/4 cups all-purpose flour
* 1/4 teaspoon salt
* 7 tablespoons unsalted butter, chilled and cut into pieces
* 1 to 2 tablespoons ice water, or more as needed
To make the dough in a food processor, combine the flour, salt, and butter in the processor and process until the mixture resembles coarse crumbs, about 10 seconds. With the machine running, add the ice water through the feed tube and pulse quickly 5 or 6 times, or until the dough comes together and starts to pull away from the sides of the container. Gather the dough into a ball, flatten it into a disk, and wrap in plastic wrap. Refrigerate for at least 1 hour.
You can substitute self-rising flour for all-purpose and salted butter for unsalted, the result will just be slightly tougher.

Breakfast Quiche
Melt 1/2 cup margarine or butter on medium heat. Remove & add:
1 cup all-purpose flour, 1/2 cup frozen hash-browns,
1/2 cup grated cheddar, 1/2 tsp Worcestershire sauce,
1/2 tsp salt, 1/4 tsp onion powder. Stir well, press into pie plate.
Dice 8 bacon slices of bacon & cook well on medium until crisp.
Transfer to paper towels with slotted spoon to drain fat.
Scatter bacon evenly over hash-brown crust.
Sprinkle 1 cup grated Swiss cheese, & 1/3 cup chopped green onion.
Beat 3 lg eggs, 1-1/2 cups sour cream, 1 tbsp all-purpose flour,
1/2 tsp salt, 1/8 tsp pepper, 1/8 tsp grated nutmeg, in med. bowl.
Pour over opnion, bake on bottom rack at 375F for 40 minutes.
Test for done when knife in centre comes out clean. (serves 6)

Ingredients
1 cup flour
1/2 teaspoon salt
1/4 cup olive oil or canola oil
1/4 cup ice water (I use refrigerated water)
Directions
1Mix flour and salt with fork.
2Beat oil and water with whisk or fork to thicken.
3Pour into flour and mix with fork.
4Press into 9" pie crust.
5Fill with quiche mixture and bake at 400F until done

Make a frittata instead.
Whisk your eggs and pour over your ingredients in a fry pan and cook the underside on the range.
When the base is cooked place under a hot grill and cook until the top of the eggs set.

make your recipe exactly the same and cook in pie case without anything under it, it is called a crustless quiche

Boil some noodles and put them in the bottom! we use it as a base all the time.
