Why does boiling water look and sound different from cold water?

When you pour boiling water from a kettle it sparkles quite differently from cold water. If you pour it on to a hard surface it makes a harder sound. Even very hot water is not the same - only boiling. Any ideas?

    I think it has to do with the molecular arrangement of the water at different temperatures. I believe molecules get closer to getter at higher temperatures. Sound travels through colliding molecules. That's why no molecules in space = no sound in space.
