Veg*ns, what are you fixing for Christmas dinner?

Just curious to see what everyone is eating this week.

I'm having stuffed manicotti with spinach and soy-free ricotta (using the pine nut recipe). I hope it turns out well.

    I'm going to be adventurous here and make one of those nut roast things for the first time. Also I'll probably have a salad and some potatoes and maybe a pie. I'm having a bunch of non-vegetarian friends over if they can make it up my driveway which has 2 feet of snow. Ha wish me luck.

    I always go to someone else's house on christmas, so I don't have any say in what is being cooked. This year I am going to try to bring some of my own stuff and cook it since I am the only vegan who is going to be there. I'll probably bring some tofurky and just request kindly if some of the mashed potatoes can be made without milk and vegetables without chicken broth. Your Christmas meal sounds like it's going to be amazing!

    A HUGE salad with tons of veggies. Butternut Squash Risotto and some sort of chicken risotto for the omnis and then quinoa stuffed red peppers. Some will have melted cheese in them, mine is going to have coconut milk and an herb blend instead.

    I'm making a vegan version of one of my families favorite appetizers with cresant roll crust with a cream cheese, mayo and parsley, garlic powder and chives (in place of dry ranch mix) spread and brocolli, cauliflower and carrots on top. My sister and I are going to make some chocolate covered pretzels and I'm going to bring hummus and rice crackers.

    I wish I would have time to put more together but I'm flying home tomorrow afternoon and I still have tons of christmas shopping to do too ahhh!
