How to and which flours to substitute?

I know different flours yield different baking reactions and can alter a dessert severely. But, provided a baking emergency, which flours can I substitute for one another? If I substitute cake flour for all purpose in, say a cookie recipe, will the cookies come out thinner, less chewy, and more puffy? Thank you!

    Cake flour has been sifted many times so if you substitute it for all purpose you'll need to add a little more. Make you recipe as directed and check it for consistency. If it looks too thin add a little more cake flour.
