the difference between beef broth and consomme.?
I am wanting to make French Onion soup and the recipe called for both beef broth and consomme and I want to know the difference and if both are necessary? also if anyone has a quick and easy French Onion soup recipe please send it. I would like to make this weekend for a romantic dinner. Thanks for your quick and accurate answers.........

Consomme is broth that has been cleared, you essentially remove all the little particles in it by making them bind to egg whites and then skimming it off until you're left with a clear liquid. You should be fine just using broth/stock I think the consomme is more a visual thing making the soup a lighter/clearer color.

Consomme is a clear both made using differet techniques: i.e. using a "raft" while making the stock. You will be fine just using broth however.
