Why do many theists, call science and scientists liars?
What possible motivation could science have to lie to anyone?
Science gathers evidence, forms hypothesis, tests them, reviews the results, reforms their hypothesis, and retests. This is done repetitively until conclusions can be drawn based on the facts.
Religion, instead, already has all the conclusions and searches for anything to validate them.
It is not possible to apply the scientific method to religious matters but why then do theists have to call the most intellectually honest people around, a bunch of liars? Why not simply ignore them if they don't like what they have to say?

Because they (science and scientist) are deceivers. They have an agenda to follow and that is to rid the world of God or any mention of Him.

Whoever lies is a liar, regardless of what they do for a living.
You seem to understand empirical science, but you don't understand forensic science. Anything that happened only one time in the past cannot be verified using empirical science. Can you prove with empirical science that an apelike creature turned into a man? Even if you can duplicate the process in a lab (which is impossible) that does not prove how it DID happen in the past.
Neither evolution nor creation cannot be proven with empirical science. That is why we use forensic science to figure out how it could have happened in the past.
If two detectives see a dead body at a crime scene, they can look at the evidence, piece it together, and then make inferences. If those inferences are correct, they will not be contradicted. Let's say one detective gets an email saying that the victim was killed by Mr. X. If the source is reliable and trustworthy, then the evidence should not contradict it.

Because they are afraid that science is contradictory to their beliefs. It makes me sad, because I think people might stop saying that atheists are smarter than theists if we woke up and realized that science is from God as much as anything else.
Also, after those global warming email came out, can you really say that all scientists are completely honest, or that they are any different from religious people? Plenty of scientists do experiments with a conclusion already in mind and are simply searching for data to validate their beliefs.
Thirdly, I think the whole world needs to start questioning their beliefs more (yes, even atheists, you don't ask nearly enough questions). We have a big problem with stubbornness, the enemy of tolerance and honest debate.

Keep in mind that they only call them liars when the facts they find show their silly superstitions to be, well, silly superstitions. When "science" doesn't disagree with them, they're quite happy to accept it and use the knowledge it provides :)
There are quite a few theists who think *all* science is some kind of evil plot by Satan to drive people away from god. Many more only think that about the parts of science that shows their beliefs are wrong. Another bunch, slightly more rational, mostly accepts science but still thinks Satan has a hand in it from time to time. And then there are those who accept almost all of it, but tack on "god started it" to anything science discovers (as in, "yes, evolution is real, but god started it and used it to create us.") Basically, they're all over the map, and can't agree on anything. Just like their religious doctrines.

Religious people are threatened by anything that may disrupt their personal identity or membership in their social group, and science is usually the 'bad guy.' This article on Self Projection as God has more detail:

An inquiry into why so many people have a low tolerance for uncertainty or new ideas is best left for a psychologist to answer. However, I don't think our schools are doing a good job of teaching kids what science is, and what it is not.

Most scientists are not liars.
Sadly science has an element of power, prestige, grant money and notoriety involved in it....as does anything involving people. As a result, scientists have been known to "fudge" data as has been seen with "climate-gate" as well as the recent scams in alleged cloning. Also, when science tries to substitute "consensus" for proof, many cringe. Evolution has much evidence to support it, but to call it fact or proved is a lie. Same with "global warming" or "climate change". Evidence to support but no proof. The same was true when science told us that bleeding a patient was good for them or smoking was good for you or Caucasians were superior to blacks or men were superior to women or teflon did no harm to you or leaded gas did no harm, etc, etc, etc.
Fortunately there are always people who are willing to question the assertion on which there is consensus.

Many of them don't. However, a troubling number of them do, mainly because they are hostile to the very concept of scientific inquiry. They already have the answers themselves and they believe that all further investigation results from a rejection of God. They also forget the following famous quote from Jesus: "Let he who is without sin cast the first stone."

Somehow, I doubt that there's a paleontologist digging up a dino skeleton and doubting his honesty b/c some theists call him a liar. I wouldn't worry about it. Or hell, maybe we'd have more scientists if we had less theists calling them liars.

I've seen several who do, especially the fundies. I don't understand how they can claim to have truth, while using lies to share it.
I find it ironic, when those who say that use their computers and internet to do so, while sitting in heated rooms with electricity. It seems they can whine about it, but can't give it up.

It's self-defense. Science has always been the enemy of religion and mainstream religion will eventually disappear and be replaced with small cults that no one will take seriously.

That's a huge generalization, as most opinion has to be on this forum.
Why do so many people think there are either/or answers?
It's like Bush say "either you're with us or you're with the terrorists".-a nonsense.
There are many theists who respect the scienctific method, and there are many scientists who betray it.
