What to do with too much hummus?
We have 3 containers of hummus and would like to do something with them other than just dipping pita. Is there a recipe for a main coarse or side dish you've tried with hummus in it?

If you make a legume soup or stew for New Years' Good Luck, whisk in some hummus to add flavor and body to to your dish.
makes a great base for a salad dressing also. I like to make a vegan Cesar Salad dressing with capers, pine nuts, white balsamic vinegar and kalamata e.v. olive oil. After you add the hummus, thin the dressing with vegie stock or water to desired consistency.

I like hummus smeared on the inside of a pita pocket along with salad greens and sliced salad vegetables.
It makes a good lunch.
Also try heating it up, and mixing in some crumbled blue cheese to use as a hot dip, it is very good that way, too.

You could use it on sandwiches instead of mayonnaise, make pita sandwiches (hummus, tomatoes, and grilled chicken is my favorite!), whisk with olive oil to make salad dressing, or make a cold veggie pizza with hummus as a sauce.

fill cherry tomatoes for an appetizer
it can be frozen and New Years is coming up as is Super Bowl Sunday.......
