What can I make with cranberries and oranges?

I have one bag of fresh cranberries and 5 oranges, what can I make with that besides cranberry orange muffins?

    Lovely combination, and can be used together in so many ways! Hopefully you will find something here that suits your taste, but I wanted to share that you cannot go wrong with serving the pancakes with the cranberry syrup (though they taste great with all types of syrup), and I realize that the syrup recipe is missing the 'orange' element you requested. Anyway, hope this helps ;)

    CRANBERRY ORANGE PANCAKES

    1 1/2 cups fresh cranberries, coarsely chopped

    1/4 cup granulated sugar

    2-3 teaspoons orange zest, finely minced

    1 1/2 cups all-purpose flour

    2 teaspoons baking powder

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    1 egg, slightly beaten

    1 cup buttermilk

    1/2 cup orange juice

    3 tablespoons unsalted butter, melted

    In a small bowl, mix cranberries, sugar & zest & set aside. In large bowl, mix flour, baking powder, baking soda & salt. In another small bowl, mix egg, buttermilk, OJ & butter, then add this mixture to flour mixture, stirring until just combined [batter should be lumpy]. Fold cranberry mixture into the other mixed ingredients. Heat a lightly greastd griddle or heavy skillet over medium heat. Pour about 1/4 cup batter onto hot griddle for each pancake. Cook pancakes until golden brown, then turn to cook other side. Serve hot! ~ Serves: 5

    CRANBERRY SYRUP

    2 1/2 cups cranberry juice

    1 cup cranberries

    3/4 cup light corn syrup

    1/4 cup granulated sugar

    1 pinch ground cinnamon (optional)

    In medium saucepan, mix all ingredients, stirring until sugar is dissolved. Over medium-high heat, bring to rolling boil, then reduce heat to medium & boil 30-40 minutes or until reduced to about 2 1/2 cups. IF YOU DO NOT WANT THE BERRIES IN THE SYRUP (I prefer leaving them in!), pour syrup through mesh strainer & discard cranberries! Store syrup covered in glass container in refrigerator no longer than 7 days.

    CRANBERRY ORANGE QUICK BREAD

    2 cups all-purpose flour

    3/4 cup sugar

    2 teaspoons baking powder

    1/2 teaspoon baking soda

    1 teaspoon salt

    1/4 cup butter (shortening)

    3/4 cup orange juice

    1 tablespoon grated orange rind

    2 eggs, well beaten

    1 cup coarsely chopped cranberries, leave a few whole

    1/2 cup chopped glace green cherries (optional)

    Stir flour, sugar, baking powder, baking soda and salt together. Cut in butter until mixture resembles coarse cornmeal. Combine orange juice and grated rind with well beaten eggs. Pour all at once into dry ingredients, mixing just enough to dampen. Dust chopped cranberries and cherries with a tablespoon of flour, carefully fold into batter Spoon into a well buttered 1 1/2 quart casserole. Sprinkle a few floured whole cranberries over top of batter. Bake in a moderate oven,350 degrees about 1 hour or until toothpick inserted in centre comes out clean. Cool in casserole 10 minutes, then remove. Store overnight for easy slicing.

    Frost with confectioner's frosting, (sift 2 cups icing sugar, very slowly add boiling water, a tablespoon at a time, until right spreading consistency, spread on slightly cooled bread).

    CRANBERRY ORANGE SMOOTHIE

    24 ounces water

    1/2 cup frozen cranberries (or fresh)

    2 oranges, peeled

    4 tablespoons walnuts

    2 tablespoons honey (or agave)

    1 teaspoon vanilla extract

    10 ice cubes (as needed)

    Place 1st six ingredients in blender & blend on high until smooth. Add & blend in as many ice cubes as needed, until desired constency is reached.

    ORANGE FROSTED CRANBERRY COOKIES

    Makes: 4 dozen

    FOR COOKIES:

    1 cup granulated sugar

    1/2 cup brown sugar, packed

    1 cup unsalted butter, softened

    1 teaspoon orange zest, minced

    2 tablespoons orange juice

    1 egg

    2 1/2 cups all-purpose flour

    1/2 teaspoon baking soda

    1/2 teaspoon salt

    2 cups fresh cranberries (or frozen)

    1/2 cup nuts, chopped (optional)

    FOR FROSTING:

    1 1/2 cups powdered sugar

    1/2 teaspoon orange zest, minced

    2-3 tablespoons orange juice

    Preheat oven to 375 degrees Fahrenheit. Spray several cookie sheets with cooking spray.

    FOR COOKIES:

    In large mixing bowl, beat granulated sugar, brown sugar, unsalted butter, orange zest, orange juice, and egg with an electric mixer on medium speed (or mix with a spoon). Stir in flour, baking soda and salt. Stir in cranberries and nuts. Drop dough by rounded tablespoonfuls about 2 inches apart onto cookie sheets. Bake 12 to 14 minutes or until edges and bottoms of cookies are light golden brown. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes.

    FOR FROSTING:

    In small bowl, stir powdered sugar, orange zest and orange juice together until smooth and spreadable. Frost cookies and enjoy!

    What I love to do is make a healthy delicious salad. I get some fresh greens, I like bitter herbs myself, and mix the cranberries and oranges with a citrius dressing. Its really good, good for you, and very fresh and light.

    Cranberry-orange relish. Maybe add some apples too.

    You can make a cool, tangy apple-lemon mix.

    Take the apple, slice it into 4 parts, no skin, (obviously the pit is out), then blend it in your blender. After that add a cup of lemon to it, and you have yourself a nice tangy apple drink. Enjoy it. ;)
