Has anyone used spinach and feta in a quiche? Pumpkin scone recipe?

I also want to use bacon.

I'll bake my own pastry, but having never used spinache or fetta before I want some insight.

Any recipe ideas would be great without too many extras, I don't eat onion, garlic or capicum and I haven't got any zuccunis, leeks, parsley, parmesan or ricotta.

I do have potatoes and pumpkin but would prefer a non pumpkin recipe tonight as Hubby doesn't eat pumpkin but I do.

Does anyone have a pumpkin scone recipe?

    Spinach & Feta Quiche:

    2 tablespoon(s) butter

    1 medium onion, chopped

    2 teaspoon(s) fresh parsley, chopped

    1 teaspoon(s) fresh basil, chopped

    1/2 cup(s) mushrooms, chopped (optional)

10 ounce(s) (package) frozen chopped spinach, thawed

    6 large eggs

    1/4 cup(s) milk

    6 ounce(s) feta cheese, crumbled

    1/4 teaspoon(s) salt

    1/8 teaspoon(s) pepper

    9 (-inch) unbaked deep-dish piecrust

    2 teaspoon(s) grated Parmesan cheese

    --------------------------------------------------------------------------------

    Directions

Preheat oven to 375 degrees F. Melt butter in skillet over medium heat. Add onion, parsley, basil and mushrooms; cook, stirring occasionally, for 4 to 5 minutes, until softened. Remove from heat. Squeeze excess liquid from thawed spinach; add to onion mixture and stir.

In bowl, whisk together eggs and next four ingredients; stir in spinach mixture. Pour into piecrust and spread evenly. Sprinkle Parmesan evenly over top. Bake for 30 minutes, until puffed and lightly browned and center is set.
