How do you do your stew chicken please no potatoes don't like them.?

take a whole chicken.. plop it in huge pan cover with water.. add a bay leaf. sprig of parsley, some chopped onion, carrots, garlic.. loads of black pepper.. and boil till chicken is falling off bones..
remove chicken, strain water and save.. debone chicken..
place boiling water back in clean pot.. plop in deboned somewhat shredded chicken.. add 1 cup of frozen mixed veggies. (like carrots, peas, beans).. and adjust spices.. then when boiling.. I like to add dumplings to mine.. homemade dumplings.. and thicken the liquid somewhat with a bit of flour/water mix..
my children love this stewed chicken with dumplings... NO potatoes..

Ginger, garlic, green onion go with a whole chicken in a pot. Add a pinch of salt and pepper, 2 tsb vodka than water to cover the chicken. Cook the chicken until 40 minutes and add 1.5 cup of bamboo shoots and 1 cup of hitachi mushrooms. Contine to cook for 20 minutes.

Cook until it falls off the bone, make dumplings with canned biscuits or your own with flour, salt, pepper, water. Drop them into the broth after removing the chicken, let them boil just a couple of minutes and serve them with green peas and the chicken.
