What we call pickles are actually pickled cucumbers. " Pickling, also known as brining or corning, is the process of preserving food by anaerobic fermentation in brine (a solution of salt in water) to produce lactic acid, or marinating and storing it in an acid solution, usually vinegar (acetic acid). The resulting food is called a pickle. This procedure gives the food a salty or sour taste. In South Asia edible oils are used as the pickling medium instead of vinegar."

Cucumbers. I slice them, put a cup of salt over them, and ice all over them, let them set for two hours, mix up my spices and vinegar, put jars and lids in hot water and heat them, put the cucumber slices in the jars, and pour the hot vinegar and spices over them, put the lids on, tighten the lids, invert the jars onto a towel, then turn them upright. When they pop, they are sealed.
