How do you get a BMW E-34 (1991) gas flap to stay open when filling up with gas?
The gas flap (door) takes a half open position when removing the gas cap. In order to insert the gas nozzle, you must hold the gas flap to the fully open position. It appears that something, like a spring, must have broken. I don't see anything broken but it must be in the hinge or the tensioning spring. Any ideas?

Most use a spring that's part of the hinge assembly. It more often then not is just a sliver of metal that when bent applies the tension to hold the door open. More then likely it broke on a 19 year old car.
You can try a salvage yard for a replacement but as it's more then likely coming off the same year car there's no telling how long it would last. Might be better off going new or live with it.
This is from a Japanese site, but the photos will show you what is involved in replacing the hinge part, on a E-34.
