I want to know how to make yeast like the commercial yeast.?
I don't want to make a starter or how to reconstitute commerical yeast. I want to make yeast that looks, smell, and acts like commercial. I want a recipe for a reasonable amount, not gallons or even quarts, just enough to make a batch or two of a yeast risen product like bread or donuts. I've looked all over the internet and can't find that information. Is it some great secret or something? Please no recipes for Herman. I had my affair with Herman years ago and finally had to kill him. LOL There must be a recipe or method out there somewhere besides the Red Star Vaults. Thanks (why does yahoo keep putting a ? behind my period? in my intro?)

There are many varieties of yeast. Commercial bread yeast is one specific variety that has been selected over the years (actually a mix of varieties). You could spend decades trying to find the best yeasts to make into a commercial-type blend. I'm afraid the best way would be to beg steal or borrow a bit of commercial yeast (any bakers near you?) and cultivate that.
Having said that, making your own starter from scratch will lead to a slower fermenting yeast that has more flavour than commercial stuff. I prefer bread made from my own starter for flavour, but commercial for speed.
Yahoo answers expects your intro to be a question, not a statement, so it adds a ? after whatever you type.
