I usually smother round, cubed or chuck steaks. After I coat them in flour, I like to brown them on both sides and remove them to make gravy.
If I make a brown gravy, will usually start by browning mirepoix in the same skillet and using it to make a roux for the gravy. Afterwards, I sometimes saute mushrooms and onions and then make a gravy, add the steaks back and simmer on top of the stove until done. My family likes either rice or mashed potatoes with gravy or macaroni n cheese, and either peas or collard greens and cornbread with it.
I sometimes make chicken fried steak with the cube steaks and make a white gravy so after browning the steaks, I will brown sausage and onions, make a roux and make gravy. I will usually make corn, broccoli and biscuits with chicken fried steak.
