About Japanese language?

why after saying someones name you also hear Japanese saying 'San' or 'Sama'

is that there version of sir or mis.

    There's different levels of politeness in japanese, and adding -san or -sama is a way of showing respect to someone else.

    For example someone you know but are not friends with yet or just have a lot of respect, you'd say

    [insert name here]-san

    If you're buying something in a shop they'd call you O-kyaku-sama, where kyaku means customer and then there's the prefix "O-" and suffix "-sama" which together mean they're being very polite to the customer and respect him.
