What spice, vegetable, or whatever is the dominate 'aroma' that denotes Italian cooking ?

    The abuse of garlic is largely an American phenomenon. I'm thinking that by Italian Food you mean pasta sauce, because otherwise your question makes no sense. BBQ sausages? Fresh fish? Grilled veal chops? Basil or pesto is a good answer. Most Italian pasta sauces in Italy are called gravy (sugo) and aren't strongly flavored at all. If there's a dominant aroma the cook has made a mistake, most often.
