DON'T try to hand raise birds and other smaller animals because they need lots and lots of care 24x7. I've tried that with abandoned birds but it didn't go very well :(
I think you could definitely try goats, cows, etc as long as you can take care of them when they grow up, if you intend to keep them. Calves are pretty okay to raise..but need attention, they'll eat almost anything. Which they shouldn't.
I did raise a goat once, and he now lives at my farmhouse. His mom died giving birth to him, so we had to bottle feed him and all those things. Goats need a lot of cleaning up after, because there's literally trails of poop behind them.
So whatever animal you pick, put in all you effort and go for it :) it's fun if you're really interested.
And yes, it takes a long time, well actually, you have to spend a long time with them taking care of them and all that.

You should hand raise a Bear cub. With any luck it will grow, mature, and eat you.
