Do you have the perfect home made baked beans recipe?
I want the perfect baked beans recipe that starts with dried beans. My husband doesn't like canned beans and we both love baked beans but it's so hard to find the right recipe. Can be oven or crock pot as far as cooking. Thank you!

Remove 2 cups of beans and mash or blend and return to pot .serve as a side or main dish . better reheated .

Here is a recipe I have used for years.
Boston Baked Beans
2 Cups dried pea beans, washed and sorted. I use navy beans or great northern beans
2 Quarts cold water
2 tsp salt
1/2 tsp dry mustard
3 Tb brown sugar
3 Tb molasses
1 med onion, peeled and chopped (optional)
1 piece 1/4 pound salt pork. I use bacon but I crisp it and add it later. (not a fan of soggy bacon)
Soak the bans over night in 1 quart of water. Drain, measure soaking water, add cold water to make 1 quart. Place beans in large kettle, add the water and simmer, stirring occasionally, 1 hour. Drain, reserving 2 cups cooking water.
Heat oven to 400 degrees F.
Place beans in ungreased 2 quart bean pot. Mix reserved cooking water with salt, mustard, sugar, molasses and stir into beans. Add onion if using. Score rind of pork at 1/2 inch intervals and push into beans so only 1/3 shows.
Cover and bake 1 hour; reduce temperature to 250 degrees F. and bake 4 hours; uncover and bake 1 hour longer.
Stir about every hour.
You can also quick soak the beans rather than soaking over night.
Quick method..Allow 1 quart of water for 1 pound of beans. Place beans in large kettle, add water, cover and bring to a boil over high heat. Reduce heat to moderate and let boil gently 2 minutes. Remove from heat and let stand 1 hour with the lid on.
When I have started making these and found I did not have molasses I will double the amount of brown sugar.
You can also use a combination of beans.
