How to cool cheesecake properly?
Leave it in the oven with the door ajar until its completely cool? How long does it need to be in hte refrigerator before its completely set / ready to serve?

It will take a couple of hours in the oven with the door open, then at least 3 more hours on the counter. It should be completely cool before you put it in fridge, otherwise you will condensation on it under the cling wrap;
Bake it one day, eat it the next. Cheesecake has to cure and the flavors have to develop.

Are you talking chilled cheesecakes or baked cheesecakes? I've made both and I usually keep the chilled ones in the fridge until I'm ready to serve (being chilled and all) and for the baked ones I cool it on a wire cooling rack once it's done cooking.
I'm no expert though but this has always worked for me. How long to cool or set or whatever should be specified on the recipe but for the baked ones just cool it until doesn't feel hot to touch on top that should be fine.
